INGREDIENTS:
For the crepe batter:
● 1/2 cup (40 gr) oatmeal
● 2 egg pieces
● 2 cups spinach
● Salt and pepper
For the filling:
● 60 gr of shredded chicken
● 1/3 cup unsweetened Greek yogurt
● 1 chipotle pepper (or to taste)
● 1 clove of garlic
● Salt and pepper
PREPARATION
● Blend the spinach, oats, eggs and salt and pepper with 1/2 cup of water (in case they are a little thick we can add more water)
● In an extended frying pan, place the dough, forming the crepes (as thin as possible)
● Flip when cooked well
● For the dressing, blend the Greek yogurt with the chipotle pepper, garlic, salt and pepper
● Fill the crepes with the shredded chicken and add the homemade chipotle dressing
